Chocolate Butterfly Cake
I have always said I love crochet because (in my opinion), unlike knitting, you can add in stitches here and there and can stray away from the pattern and make it up a little if you like. I often compare the two to cooking and baking - baking being similar to knitting because you have to follow the pattern/recipe more specifically.
However… today, I made up my own cake recipe and it was a success!!! So I figured I’d share it with you all so you can enjoy the deliciousness too!
Ingredients
1 egg (vegan option: flax egg)
1 cup cooked quinoa
1/2 cup honey or maple syrup
1/4 cup milk of your choice
1 1/2 cups flour - Gluten free or regular works
1/4 tsp salt
1 tsp baking soda
2 Viva Cacao Chocolate Bars - or 82g of your favourite chocolate
Instructions
Preheat oven to 350 F
Break up chocolate into 0.5cm chunks
Add egg, quinoa, honey and milk to a food processor and blend together.
Add flour, salt and baking soda to the blender and blend and until all thoroughly mixed.
Add half of the chocolate to the blender and blend until the chocolate is evenly spread through the mixture
Pour batter into a 8” X 8” baking dish that is either greased or lined with parchment paper
Sprinkle the remaining chocolate chunks on top
Bake in the oven for 15 minutes - check with a skewer, if it comes out clean it’s ready.
Leave to cool for 10 minutes before eating
